* Chicken should be better if served right away
* Cake - it came out exactly how it should have but too gummy for the girls
* Tofu .. surprise of the night!
* Salad - Many steps but easy and delicious and can be prepared ahead
* Mushrooms - too cheesy
* Pork - Here too many steps but so worth it!

EXTRA - For Jen, Roasted Red Pepper Sauce

In a food processor, combine:

1 jar (16 oz) roasted red pepper, drained
1/4 cup olive oil
1/4 onion, roughly chopped
2 garlic cloves, minced
2 tbsp chopped parsley
1 tbsp lemon juice
Salt and pepper



I made half the recipe, and added mayo to make it dip. Could have used more mayo to thicken every more.

> Arancini 7 - add more parmesan for flavoring with rice, sauce also needed more spices (we added fresh basil & oregano)

> Penne with Creamy Vodka Sauce 9 - I would add more mushrooms next time

> Spinach Salad 8 - we added more orange juice to dressing

> Pizza with homemade Sauce 7.5
   *** Lesson learned, don't wait too long between frying dough and baking as it got a big soggy or  don't dress it right away maybe

Pizza Fritta Puttanesca
Makes two 11-inch pies

1 lb. cherry tomatoes, quartered
1 small shallot, diced
1 clove garlic, minced
2 anchovy fillets, minced
½ cup dry cured black olives, pitted and slivered
2 Tbsp. capers, chopped
1 tsp. dry red-pepper flakes
Salt
1 lb. pizza dough
Vegetable oil
8 oz. fresh mozzarella, sliced
